Dear All:

This year's CYS dinner will be on the 23rd September, 2000, Saturday. The location will be at Butterfield's, at Soong Rooms I,II, III & IV of Dorset House, in Quarry Bay. The price is HKD250 per person including 2 drinks, and free corkage for whoever would like to bring their own wine / spirit. The menu is as follows (tentative):

• Poached Live Shrimps
• Braised Shark's Fin Soup with Abalone, Sea Cucumber and Fish Maw
• Steamed Fresh Squids with Minced Garlic
• Baked silver cod Fillet Thermidor
• Braised Seasonal Vegetables with Black Mushrooms
• Roast Chicken Marinated with Garlic
• Fried Rice with Conpoy and Egg White
• Shrimp Dumpling with Noodles in Bouillon
• Sweetened Walnut Cream
• Chinese Petit Fours
